Bakeapples are considered a delicacy in Newfoundland and Labrador. They are labor intensive to harvest and are always worth the effort to create delicious treats.
Late summer and early fall in Newfoundland and Labrador find the local berry spots visited on a regular basis. Some patches are well know and others are kept secret by one or two people. The most common berries harvested are blueberries, partridgeberries, raspberries and bakeapple berries. Of the four, the bakeapples are the most labor intensive. They grow around marshy areas and are more difficult to find. This makes them all the more appreciated as a delicacy. NOTE: The bakeapple berries can be exchanged for blueberries, partridgeberries, raspberries or chopped apple. The apple is mixed with brown sugar and does not need to be cooked. If frozen berries are used the water can be decreased by 1/2 cup because there will be more liquid released from the frozen berries. The crumbles can be dished out while still warm or cooled and cut into square-shaped pieces. Some people like to top it with ice-cream or whipped cream. The crumbles are also delicious eaten as they come from the oven. When crumbles are served fresh from the oven with a cup of tea, coffee or hot chocolate, they are a perfect warm-up for a cold day. They make a satisfying dessert for the cold days of fall and winter.
