A Treat Made from a Newfoundland and Labrador Fruit Delicacy

Bakeapples are considered a delicacy in Newfoundland and Labrador. They are labor intensive to harvest and are always worth the effort to create delicious treats.

Late summer and early fall in Newfoundland and Labrador find the local berry spots visited on a regular basis. Some patches are well know and others are kept secret by one or two people.

The most common berries harvested are blueberries, partridgeberries, raspberries and bakeapple berries. Of the four, the bakeapples are the most labor intensive. They grow around marshy areas and are more difficult to find. This makes them all the more appreciated as a delicacy.

Bakeapple Berry Crumbles Recipe

This recipe doesn’t require a lot of extra ingredients because the taste of the bakeapple berries is a treat in itself.

Ingredients for top and bottom layer:

  • 2 cups rolled oats
  • 1 cup soft butter
  • 2 cups flour
  • 1/4 tsp salt
  • 3/4 cup brown sugar

Ingredients for filling:

  • 2 cups bakeapple berries
  • 1 cup water
  • 1 cup sugar
  • 1 tbsp lemon juice

Steps:

  1. The ingredients for the filling are cooked in a saucepan until the berries are soft. Then they are mashed. The mixture can be left to stand for a few minutes so that it is not too runny.
  2. The ingredients for the top and bottom layers are combined together in a bowl and rubbed together until they are crumbly. Clean hands will do for this step.
  3. Half of the top and bottom layer mixture is pressed into a greased 9 x 9 inch square pan.
  4. The layer of filling is spread on next. It is important to do this gently so that the bottom layer is not pulled up into the filling.
  5. The remaining top and bottom layer mixture is pat on top of the filling. Again, this should be done gently to avoid squishing the filling up through the top layer.
  6. The pan of bakeapple berry crumbles is baked at 350 F for 20-25 minutes, depending on the individual oven.

NOTE: The bakeapple berries can be exchanged for blueberries, partridgeberries, raspberries or chopped apple. The apple is mixed with brown sugar and does not need to be cooked. If frozen berries are used the water can be decreased by 1/2 cup because there will be more liquid released from the frozen berries.

The crumbles can be dished out while still warm or cooled and cut into square-shaped pieces. Some people like to top it with ice-cream or whipped cream. The crumbles are also delicious eaten as they come from the oven.

When crumbles are served fresh from the oven with a cup of tea, coffee or hot chocolate, they are a perfect warm-up for a cold day. They make a satisfying dessert for the cold days of fall and winter.
